黄梨小蛋糕 Pineapple Cake With Lemon Cheese Frosting

很久没有吃黄梨了。  今天在网上看见这个食谱,突然有很想吃蛋糕的感觉。  所以就把食谱给存起来,等星期日,小捣蛋睡午觉是就可以大展身手了。

期待的日子到了, 却发现 paper cup 用完了,  那就只好用 cupcake liner 了。   但是,我觉得很奇怪。。。 为什么蛋糕考好了, liner 会自动打开呢?

这蛋糕即容易做,又好吃。


刚从烤炉出来的,卖相不很好。  :(

加了一些装饰,好像有好看哦!  :)

Frosting 不够,只好做做其它装饰咯。。。


对不起,忘了食谱取之那里了。。。

Pineapple Cupcakes With Lemon Cheese Frosting

Ingredients :-
A:
250g Butter
140g Caster Sugar
3 Eggs
250g Plain Flour, shifted with
1 tsp Baking Powder
120g Canned Pineapple Syrup
B:
150g Canned Pineapple, drained & chopped
50g Ground Almond

Frosting :-
100g Cream Cheese
50g Butter
80g Icing Sugar
1 tsp Lemon Juice

Method :-
1)   Cream caster sugar & butter until fluffy.  Add in eggs one at a time & beating well after each addidtion.
2)   Add fllur & mix well.  Add pineapple syrup & stir well.  Lastly mix in ingredient B.
3)   Spoon the batter into paper cups & bake in a preheated oven at 180C for 23 - 28 minutes or until golden brown.   Remove & leave to cool.
4)   FROSTING : Put all ingredients into a mixing bowl and mix until smooth.
5)   Spoon the frosting into a piping bag & pipe on the cupcakes as decoration.  Serve.
